Calzone (quick and easy)

When most of us think of Italy we think of pasta or pizza, although there are many more amazing Italian dishes. I have to admit Italy did give pizza a good name. So why not make an excellent alternative to pizza, calzone? A homemade calzone is  almost like a pizza, except everything is cooked inside instead of outside. Extremely easy, just use store-bought pizza dough, or from a bakery. All you have to do is put it together, bake it and eat it. So the next time you are craving a pizza why not try this Calzone (quick and easy) instead? You will be glad you did! Buon Appetito!

Homemade Fresh Veggie Calzone

Calzone, this is a quick and easy recipe that is basically a pizza stuffed with fresh tomatoes, pancetta, veggies and mozzarella cheese.  Delicious.
Prep Time 10 minutes

Ingredients
 
 

  • 1 ready made pizza dough (store bought, bakery or homemade)
  • 1/2 cup pancetta or bacon (cubed)
  • 1/2 pepper sliced
  • 1 cup chopped mushrooms
  • 15 grape or cherry tomatoes (halved)
  • 1/2 teaspoon basil (divided)
  • 1/2 teaspoon oregano (divided)
  • 1/4 teaspoon salt (divided)
  • 2 tablespoons olive oil (divided)
  • 3/4 cup mozzarella sliced or shredded (firm mozzarella not fresh), 120 grams

Instructions
 

  • Pre heat oven to 450°- 480° (250° celcius)
  • In a small bowl combine, halved tomatoes, half the spices - basil, oregano, salt and 1 tablespoon olive oil mix together. Set aside.
  • In a small pan add 1 tablespoon olive oil add the pancetta or bacon, mushrooms, pepper and the remaining half spices until golden.
  • On a medium size pizza pan, drizzle a little olive oil (approximately 1 -2 teaspoons), place rolled out pizza dough on top, and add in the following order, pancetta mixture,  tomato mixture (spread both evenly on 1/2 the pizza dough), and then the shredded mozzarella.
  • Gently pull the other half of the pizza dough to cover the mixture filled side and crimp the edges (wet finger tips to help dough stick), so that none of the filling escapes. Bake for approximately 15-20 minutes or until golden, let sit 5 minutes before cutting. Buon appetito!

    I tried it last nite, dubbed “Pizza Nite” in our household. Used my homemade pizza sauce, onion, baby Bella’s, green olives, sweated pepperoni and fresh spinach instead. Fantastic on a stone over a grill! My only suggestion to folks is to roast, or use another method, any veggies which have a tendency to release oils and water, like the mushrooms and green olives, if they don’t like it as juicy as ours was. Nonetheless, the crust held its own and the calzone was not soggy at all.

    This just became my go-to for any calzone I make now.
