Easy Mocha Baked Donuts

Mocha Baked Donuts, are light and soft with just the right amount of coffee taste. Top with a drizzle of a simple Cream Cheese Frosting and it’s the perfect Dessert, Snack or even Breakfast Treat.

I never realized how popular donuts were in Italy until I moved here. And I have to admit they sure know how to make a delicious one. Especially around Carnivale Time everyone is making and eating these Graffe, a soft deep fried out of this world donut. But today I am making a healthier type that is baked and made with yogurt.

How to make them

In a medium bowl whisk together flour, baking powder, baking soda, salt, sugar and cocoa. In a small saucepan over low heat melt butter, remove from heat and let cool slightly. In a medium bowl whisk together egg, coffee, milk, yogurt and vanilla, add melted butter and combine.

Mix the wet ingredients into the dry ingredients and mix just until flour is absorbed, the batter should be a little lumpy.

Fill doughnut pan until almost full.

Bake for approximately 8-10 minutes (check with a toothpick for doneness), cool in pan and then remove to wire rack to cool completely before drizzling with glaze if desired.

Do I need a donut pan?

Not really you can make your own, all you need is a cupcake pan and foil. Cut the foil into 11 inches (30cm) and then cut in half, gently mold the foil around your middle or ring finger. Then gently press the form into the muffin tin. And there you have a donut form to make baked donuts.

What does mix just to combine mean?

It means to combine the ingredients just until the flour is moistened, the mixture will be slightly lumpy but don’t worry it is suppose to be like that. Over mixing produces a heavy rubbery dry baked good.

What does yogurt do in a baked good?

When adding yogurt to a baked good such as a cake, sweet bread or baked donuts it adds moisture and fat to the batter which results in a moist and delicious result.

Why use room temperature ingredients?

Room temperature ingredients incorporate easier and better, they also make a fluffier baked good, just remember to remove the ingredients from the fridge about 30-60 minutes before using, depending on how warm your house is.

Is it Donut or Doughnut?

In the Oxford English Dictionary it lists both spellings, Doughnut is the preferred spelling in British English and donut is the preferred American spelling. So in other words they both mean the same thing, just different spelling.

Why use a pastry bag?

I found using a pastry bag was much easier and faster,  it is easier to control the amount of batter added to the pan. Of course you can use a spoon if you wish.

How to store them

Store the baked cooled donuts in an air tight container at room temperature. They will last up to 4 days. They can also be frozen in a freezer safe bag or container. They will keep for up to 2-3 months in the freezer.

Easy Mocha Baked Donuts

Ingredients
 
 

FOR THE DONUTS

  • 1 cup all purpose flour (or pastry flour)
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1/3 cup granulated sugar
  • 1 teaspoon cocoa
  • 3 tablespoons butter (melted & cooled)
  • 1 large egg (room temperature)
  • 1/4 cup coffee (room temperature)
  • 1/2 teaspoon vanilla
  • 3 tablespoons greek yogurt* (room temperature)
  • 2 tablespoons milk* (temperature)

If using regular yogurt add just 1 tablespoon of milk.

    GLAZE

    • 1/4 cup cream (whipping, whole, heavy or half and half)
    • 2 tablespoons mascarpone or cream cheese
    • 1 tablespoon icing/powdered sugar (sifted)

    Instructions
     

    • Pre-heat oven to 350° (180° celsius). Grease 6 tin donut pan.
    • In a medium bowl whisk together flour, baking powder, baking soda, salt, sugar and cocoa.
    • In a small saucepan over low heat melt butter, remove from heat and let cool slightly.
    • In a medium bowl whisk together egg, coffee, milk, yogurt and vanilla, add melted butter and combine.
    • Mix the wet ingredients into the dry ingredients and mix just until flour is absorbed, it will be a little lumpy but that is perfect.
    • Fill doughnut pan until almost full. Bake for approximately 8-10 minutes (check with a toothpick for doneness), cool in pan and then remove to wire rack to cool completely before drizzling with the glaze.

    FOR THE GLAZE

    • In a small bowl add whipping cream, mascarpone and icing sugar, beat or whisk until smooth, if it's too thin add more sugar if too thick add more cream. Top with glaze. Enjoy!

    Notes

    For room temperature ingredients remove from the fridge 30-45 minutes before using.

    1. I’ve baked the donuts which look great but the glaze recipe only has 1 tbsp of icing sugar? Is that correct?

      1. Hi Gabby, sorry it didn’t work out, but my guess is you didn’t let the butter cool after it was melted. This is my base recipe for my baked donuts and it has never curdled for me.
