Spaghetti Guanciale Eggs Pecorino Black Pepper

Step 1

In a small bowl beat together the egg yolks, pecorino & black pepper.

Step 2

Add some hot pasta water and mix to combine.

Step 3

In a large pan add a little olive oil and sliced guanciale,

Step 4

Cook until desired doneness.

Step 5

Remove the guanciale to a clean plate. Add the cooked spaghetti, a little past water & toss to combine.

Step 6

Remove the pan from the heat, add the egg mixture and a little pasta water, toss quickly to combine.

Step 7

Add the guanciale and gently combine.

Step 8

Serve immediately sprinkled with pecorino & black pepper. Buon Appetito!
