Eggplant Cheese Strudel


Puff Pastry Roll Eggplant Olive Oil Salt Parsley Prosciutto Cheese Milk

Step 1

Grill the eggplant then toss with olive oil, salt and parsley.

Step 2

Line half the eggplant slices down the middle of the puff pastry.

Step 3

Top with half the prosciutto slices.

Step 4

Top with half the shredded cheese and repeat. Slice the edges of the puff pastry into strips,  until you get to the filling.

Step 5

Pull the strips over the filling in a crisscross pattern. Brush with milk & bake.

Step 6

Slice & serve! Enjoy.
