Italian Pignoli Cookies

Ingredients

Pine Nuts Almonds Granulated Sugar Salt Egg Whites Vanilla or Almond Extract Powdered Sugar

Step 1

Toast almonds. Place them in a single layer on an ungreased baking sheet. Bake until they are golden brown, remove to cool in a bowl.

 Add cooled almonds, sugar and salt to a food processor or blender and blend until a very fine powder is achieved.

Step 3

Move the powdered ingredients to a bowl then stir in the egg whites and extract. Mix until the dough is combined.

Step 4

Form into pignoli cookie dough balls or crescents then dip the cookies into the pine nuts on the plate.

Place them with pine nuts top up on a baking sheet, dust with powdered sugar.

Step 6

Bake until the pine nuts are golden brown. Cool about 5 minutes on the pan. Dust with powdered sugar before serving.
