Italian Stracciatella Soup
How to make it
Only 4 ingredients, broth, eggs, parmesan cheese and nutmeg if desired to make this 5 minute Roman Soup!
Bring the broth to a boil, you can use homemade or storebought.
In a small bowl beat the eggs.
Add the freshly grated parmesan cheese and nutmeg if using and beat with a fork to combine well.
Add the egg mixture to the boiling broth in a slow steady stream while mixing with a whisk, let cook for about 3-4 minutes. Once the mixture boils again, give it another whisk and then serve.
