Squash Puree Potato Egg Yolk Parmesan Cheese Salt Nutmeg (optional) Flour

Roast the squash & boil the potatoes.

Pre-Preparation

STEP 1

Combine the mashed potato & puree.

Step 2

Add the yolk, spices & flour.

STEP 3

Combine to form a dough & pat into a circle.

STEP 4

Form into gnocchi & dust with a little flour. 

STEP 5

In a large pan heat the sage & butter then toss with the cooked gnocchi.

STEP 6

Plate & Enjoy!
