Pumpkin Pastry Cream Crostata

Ingredients/Dough

Flour Sugar Baking Powder Eggs Butter

Pastry Cream

Pumpkin Puree Milk Cream Egg Yolks Flour Sugar Vanilla Cinnamon Pumpkin Pie Spice

Step 1

Make the pastry cream - Heat the milk & cream until very hot, combine the yolks, sugar, vanilla & flour.

Step 2

Over low heat, slowly add the milk & cream mixture.

Step 3

Then whisk in the puree and spices.

Step 4

Heat on medium until thickened. Let cool, cover with plastic and chill if desired.

Step 5

It can be made with a food processor, mixer or by hand. Combine the ingredients & form a dough.

Step 6

Chill the dough 30 minutes.

Step 7

Divide the dough in 2 parts, roll half & place in the prepared pan.  Fill with the cream.

Step 8

Roll out the remaining dough and cut into strips, cover the pie with a lattice covering, brush with milk.

Step 9

Bake!
