In a medium frying pan sauté the sausage, fennel (if using), salt and paprika until brown, drain off the fat and let cool in a clean bowl.
When cool add to the meat mixture, the raw egg and mozzarella cheese (1¾ cups/200 grams).
Roll the pizza dough to a rectangle (9x10" / 24x26 cm) and place on a lightly greased or parchment paper lined cookie sheet, sprinkle the top of the dough with the sausage cheese mixture. Roll up lengthwise, brush the top with a little olive oil and sprinkle with the remaining shredded mozzarella.
Bake for approximately 15-20 minutes or until browned. Let sit 2- 3 minutes then slice and serve. Enjoy!

Sometimes my grandmother would make it another way, instead of rolling the dough she would place one layer of dough on the bottom of an 8 inch square pan add the filling and then place a second layer of dough on top.Any leftovers should be stored in an airtight container and refrigerated, it will keep for up to 3-4 days in the refrigerator. You can re-heat it in the oven or in the microwave. Be sure not to leave it out at room temperature for more than two hours.To freeze the baked calzone, let it cool completely, then wrap it tightly in plastic wrap and place in a freezer bag. It can last in the freezer for up to 3 months. You can microwave or heat in the oven from frozen or thawed, until warm.
