Cinnamon Apple Muffins

Ingredients

  • 1 medium apple chopped
  • 1/2 medium apple sliced
  • 1/2 cup yogurt (plain) (125 grams)
  • 1 tablespoon milk
  • 1 large egg (room temperature)
  • 1/4 cup butter salted (melted & cooled) (50 grams)
  • 1 cup cake / pastry flour* (125 grams)
  • 1/3 cup + 1 tablespoon brown sugar (80 grams)
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon cinnamon
  • 1 pinch salt

*Homemade cake flour is very easy to make, for every one cup of all purpose flour remove 2 tablespoons of flour then replace it with corn starch. Sift or whisk together to combine well.

    Instructions

    • Pre-heat oven to 350F (180C). Grease and flour a medium 6 muffin pan size.
    • In a medium bowl mix together the yogurt, milk, egg and melted butter with either a whisk or fork.
    • In a large bowl whisk together the cake flour, sugar, baking powder, baking soda, cinnamon and salt.
    • Add the yogurt mixture to the flour mixture just until combined (about 15-16 stirs). Fold in the chopped apples.
    • Spoon the mixture into the prepared muffin tin. Top with the sliced apples (if desired) and sprinkle with a little cinnamon sugar. Bake for about 20-30 minutes, check for doneness with a toothpick. Let cool or eat warm. Enjoy!

    Notes

    This recipe is made for 6 muffins but it can also  be doubled.
