In a medium bowl beat eggs slightly with a fork, stir in oil and shredded zucchini. In a large bowl, whisk together flour, sugar, baking powder and salt. Stir liquid mixture into dry mixture just until moistened.
Spoon into loaf pan. Bake for approximately 1 hour. Let bread cool in pan for about 5 minutes then move to a wire rack to completely cook, this will keep the bread from becoming soggy. Sprinkle with Powdered Sugar if desired before serving.
