Combine the cookie crumbs with the melted butter and press it into your tart pan or pie dish. Place it in the freezer to firm up. While the crust is in the freezer, place scoops of ice cream on a cookie sheet lined with parchment paper. Place the ice cream scoops in the freezer.
To assemble, top the cookie crust with a thin layer of caramel sauce. Place the ice cream scoops on top, and then drizzle more caramel sauce over the top. Slice and serve right away.
