Homemade Potato Gnocchi

Step 1

Boil the potatoes until tender, then pass through a ricer or mash, On a flat surface add the flour , potatoes and an egg.

Step 2

Gently knead to form a soft dough, cut small amounts of dough to form ropes and cut into small pieces, then slide each piece on a fork and squeeze a little.

Step 3

Sprinkle with a little flour and toss, so they don’t stick together. Let the gnocchi rest 20 minutes before cooking.

Step 4

Boil the gnocchi in salted boiling water, they are ready when they float to the top!

Step 4

Toss with a simple Tomato Sauce (recipe included). Buon Appetito!
