In a medium bowl whisk together the flour, baking powder and salt to remove any lumps.

In a stand mixer or using a hand mixer, beat together the eggs, yolks and sugar in a large mixing bowl on medium speed.

Add the melted butter and vanilla then beat again to combine. Beat in the ricotta until it has a whipped appearance. Lastly add the zest and milk.
