Mix together olive oil, garlic, oregano, salt, pepper and chopped rosemary in a small bowl.

In another bowl, toss together the potatoes, broccoli florets, chopped carrots. Add olive mixture and stir to coat.

Place the mixture on half of the prepared baking sheet and bake.

Remove the pan from the oven and place pork chops on the pan, brush with olive oil and sprinkle with a pinch of salt, pepper, oregano and rosemary, flip over and repeat.
Step 5
Continue to bake until the pork chops reach an internal temperature of 160F. Rest for 2-3 minutes before serving.
