Easy Tiramisu

*For the replacement of raw eggs, you can try using a product called Egg Replacer or there are now pasteurized egg products and pasteurized eggs available. **If you want to make it really fast and easy substitute lady fingers for the Italian sponge cake.

Ingredients

  • FOR THE ITALIAN SPONGE CAKE
  • 5 eggs
  • 1 cup sugar 200 grams
  • 1 tablespoon baking powder 15 grams
  • 2 1/2 cups of flour 300 grams
  • FOR THE FILLING
  • 1- 1 1/2 cups strong coffee (espresso) if you are using the Italian coffee cake wet the cake well with the coffee. 240-360 grams
  • 1 cup mascarpone 250 grams
  • 1 cup whole cream 250 grams
  • 1 egg
  • 1 1/2 tablespoons sugar 24 grams

Instructions

  • Pre-heat oven to 350° (180° celsius), grease a 9" (24 centimeter) cake pan.
  • FOR THE ITALIAN SPONGE CAKE
  • Beat on medium-low speed eggs and sugar till well mixed (1-2 minutes) add flour and baking powder and continue to beat on medium speed for 2-3 minutes or until smooth. Pour into greased cake pan and bake for approximately 30 minutes or until tested done. Let cool, then cut into 3 layers.
  • While cake bakes make the coffee and let cool.
  • FOR THE FILLING
  • Beat together sugar and eggs till frothy, then add the mascarpone and cream, beat till thick.
  • While cake bakes make the coffee and let cool.
  • Place 1 layer of cake (cake side up) on a large plate and spoon ? of the coffee on top, cover with ? of the cream mixture and repeat with the remaining 2 layers. Sprinkle unsweetened cocoa on top. For a change I used finely chopped unsweetened chocolate. (the cream mixture goes on the layers and not around the cake). Refrigerate at least 5 hours even better overnight for best tasting results. Enjoy!
