Mix graham cracker or cookie crumbs and melted butter, press down on the bottom and a little on the sides of a 7 – 8 inch / 17 – 20 cm springform cake pan (or line a regular cake pan with plastic wrap). Place in the refrigerator for 30 minutes. Remove from the fridge and spread the melted chocolate on top. Refrigerate while making the ice cream.
FOR THE ICE CREAM
In a medium bowl whisk together the sweetened condensed milk and vanilla, set aside.
In a large bowl whip the cream until stiff peaks appear. Gently fold in the condensed milk mixture into the whipped cream and combine well.
Remove the base from the fridge and spread the ice cream filling evenly over the chocolate. Cover with plastic wrap and freeze for 6-8 hours.
In a bowl place the chocolate (chopped) and butter and melt together via bain-marie or microwave. Stir to combine until smooth and let cool.
Remove the cornetto cake from the pan and place on a clean plate. Pour the cooled melted chocolate over the cake gently spread to let a bit drizzle over the sides. Top with the coarsely chopped nuts. Serve immediately (or if too soft freeze 15-20 minutes before serving). Enjoy!
Notes
In Italy, this is often called torta cornetto.Store covered in the freezer for up to 2 weeks. Let the cake sit at room temperature for 10 to 15 minutes before slicing and serving. For cleaner slices, run a sharp knife under hot water, wipe it dry, then cut.
