These Peach Muffins are soft, moist, and packed with juicy peaches for a delicious homemade treat. Perfect for breakfast, brunch, or a snack, they're easy to make and bursting with fresh peach flavour.
Pre-heat oven to 400F (200C), grease and flour or line muffin tin with paper liners (this recipe makes 8 muffins).
Whisk together the flour, cinnamon, baking soda, and salt in a large bowl.
Beat the sugars, oil, egg and egg yolk together in a separate bowl. Add to the flour mixture and stir just until combined (about 14 or 15 stirs). Fold in chopped peaches.
Spoon muffin batter into the prepared muffin cups. Bake for 5 minutes then lower the heat to 350F (180C), continue to bake for approximately 12-15 minutes, check for doneness with a toothpick. Let cool for about 5-10 minutes in the pan then move to a wire rack to cool completely. Enjoy!
Notes
If you find the batter extremely thick (it will be thick) add 1-2 tablespoons of milk.
Crumble topping (optional)
¼ cup packed brown sugar (55g)
2 tablespoons all purpose flour
1 tablespoon butter softened
2 tablespoons finely chopped nuts
In a small bowl combine the sugar and flour cut in the butter until the mixture resembles large crumbs, then stir in the nuts. Top the muffins before baking.How to Store: Store cooled muffins in an airtight container at room temperature for up to 2-3 days.They can be stored in the fridge for up to 5 days, but I find that tends to dry them out. To freshen them up, pop a muffin in the microwave for 15 to 30 seconds.For longer storage, freeze them in a freezer safe bag or container for up to 3 months and thaw at room temperature.
