Ingredients

FOR THE SAUCE

  • 2 tablespoons olive oil (27 grams)
  • 1 clove garlic chopped
  • 1 1/2 cups tomato puree (350 grams)
  • 1 1/2 cups water (350 grams)
  • 1 teaspoon basil (.8 grams)
  • 1 teaspoon oregano (.8 grams)
  • 1/2 teaspoon salt (2.8 grams)

FOR THE TOPPING

  • 1 cup grated firm Mozzarella (100 grams)
  • 1/4 cup freshly grated Parmesan Cheese (20 grams)
  • 1 pound fresh Tortellini (I used meat filling) (500 grams)

Instructions

  • In a medium to large oven proof baking dish add olive oil, garlic, puree, water, and spices, bring to a boil then simmer (half covered) for approximately 15-20 or until thickened. Stirring occasionally.
    While sauce is cooking boil water, add salt and cook tortellini al dente. Drain.
    Add tortellini to cooked sauce and gently combine. Top with grated Mozzarella and sprinkle with Parmesan cheese. Place under broiler for approximately 2-3 minutes or until cheese melts and top is golden. Let sit 2-3 minutes and serve. Enjoy!
