1teaspoonbaking powder
¼teaspoonbaking soda
¾teaspooncinnamon

*Homemade cake flour is very easy to make, for every one cup of all purpose flour remove 2 tablespoons of flour then replace it with corn starch. Sift or whisk together to combine well.
Pre-heat oven to 350F (180C). Grease and flour a medium 6 muffin pan size.
In a medium bowl mix together the yogurt, milk, egg and melted butter with either a whisk or fork.
In a large bowl whisk together the cake flour, sugar, baking powder, baking soda, cinnamon and salt.
Add the yogurt mixture to the flour mixture just until combined (about 15-16 stirs). Fold in the chopped apples.
Spoon the mixture into the prepared muffin tin. Top with the sliced apples (if desired) and sprinkle with a little cinnamon sugar. Bake for about 20-30 minutes, check for doneness with a toothpick. Let cool or eat warm. Enjoy!
