Cinnamon Apple Muffins
So for this month, the get together with my Blogger friends, we decided to share Apple Recipes. A delicious way to say hello to October and Fall.
I am a muffin lover, from Chocolate to Banana and everything in between. Nothing like a muffin with a cup of tea or coffee in the afternoon or even for breakfast.
Naturally I would make muffins for my family too. They have become quite common in Italy now.
How to make Apple Muffins
- In a medium bowl mix together the yogurt, milk, egg and melted butter.
- In a large bowl whisk together the cake flour, sugar, baking powder, baking soda, cinnamon and salt.
- Add the yogurt mixture to the flour mixture just until combined (about 15-16 stirs).
- Fold in the chopped apples.
- Spoon the mixture into the prepared muffin tin.
- Top with sliced apples (if desired) and sprinkle with a little cinnamon sugar.
- Bake for about 20-30 minutes.
- Let cool before serving.
How to make Cake / Pastry Flour
Homemade cake flour is very easy to make, for every one cup of all purpose flour remove 2 tablespoons of flour then replace it with corn starch. Sift or whisk together to combine well.
What are the best apples for muffins?
Braeburn, Rome, Jon Gold, Gala, Granny Smith, Honey Crisp, and SweeTango apples are probably your best choice for muffins. I usually reach for Gala apples.
How to store muffins
The best way to store muffins is to line a plastic bag or an airtight container with paper towels. Then place the muffins on top and cover the muffins with a paper towel.
You can store them at room temperature for up to 3 days.
How to freeze muffins
Be sure to completely cool the muffins before freezing, place them single layer in a freezer bag or container. They can be kept for up to 3 months in the freezer.
They can be thawed at room temperature.

Cinnamon Apple Muffins
Ingredients
- 1 medium apple chopped
- 1/2 medium apple sliced
- 1/2 cup yogurt (plain) (125 grams)
- 1 tablespoon milk
- 1 large egg (room temperature)
- 1/4 cup butter salted (melted & cooled) (50 grams)
- 1 cup cake / pastry flour* (125 grams)
- 1/3 cup + 1 tablespoon brown sugar (80 grams)
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 teaspoon cinnamon
- 1 pinch salt

Instructions
- Pre-heat oven to 350F (180C). Grease and flour a medium 6 muffin pan size.
- In a medium bowl mix together the yogurt, milk, egg and melted butter with either a whisk or fork.
- In a large bowl whisk together the cake flour, sugar, baking powder, baking soda, cinnamon and salt.
- Add the yogurt mixture to the flour mixture just until combined (about 15-16 stirs). Fold in the chopped apples.
- Spoon the mixture into the prepared muffin tin. Top with the sliced apples (if desired) and sprinkle with a little cinnamon sugar. Bake for about 20-30 minutes, check for doneness with a toothpick. Let cool or eat warm. Enjoy!
Notes
This recipe is made for 6 muffins but it can also be doubled.

This is my favorite muffin recipe I’ve ever tried! Perfect amount of sweetness, and a fluffy yet dense muffin, all at the same time! They don’t rise very much, so fill them to the brim, and be prepared for double the amount the recipe calls for! But that’s fine, in our household, they get snapped up in a hurry!

I love apples and cinnamon anything, this looks like such an awesome recipe! I was thinking to adapt this recipe for my baby who’s on baby led weaning, I wonder if it’s possible to omit the sugar from the recipe?

Hi Claire, I have never made them without sugar, but you could try and see how it goes, with the yogurt and apple it should be ok for sweetness. Let me know if you try it.
