In a medium pan add the olive oil and pancetta, cook over medium heat until golden then add the peas and water.
Cover and cook over medium heat for approximately 20 minutes or until water has evaporated and peas are tender, taste for salt add a pinch or two if needed. Enjoy!

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave until warmed through.Freezing: Not recommended, as the peas can become mushy once thawed.
