When it comes to Fall the majority of Sweet Recipes are usually made with 1. Pumpkin or 2. Apples. To tell the truth, yes I like pumpkin but not too much.I love Pumpkin Pie and I love Pumpkin Ravioli but that is pretty well it.
I try to tell myself come on you can like it more than that. But it doesn’t seem to work. The Italian is pretty much in agreement with me. My youngest won’t even look at anything Pumpkin. But then there is my eldest who can’t get enough of it.
Therefore Apples are my favourite, I adore Apples. I love Fall just so I can hear that incredible crunch when I bite into an Apple.
Caramel Upside Down Apple Cake
I remember my sister-in-law would make a Pineapple Upside Down Cake that was pretty good, although not one of my favourite desserts.
But then a little while back I found an old recipe of my Mom’s which I don’t remember her ever making, a simple Apple Upside Down Cake.
So I thought why not give it a try. Let me tell you, Yeah an Upside Down Apple Cake is much more to my liking than the Pineapple version.
This recipe is so easy and I was thrilled when I turned it over and there was a syrupy sweet Caramel Sauce that was created from the butter and brown sugar. Yummy Perfection!
I decided that this would be my contribution to all my friends and family celebrating Canadian Thanksgiving this weekend who are more Team Apple then Team Pumpkin. Happy Thanksgiving and Enjoy!
The perfect Fall and Winter Comfort Cake. Apples and a Delicious self made Caramel Sauce make it amazing.
- 3 tablespoons butter (42.6 grams)
- 1/3 cup brown sugar (67 21/2 grams)
- 3 apples (peeled, cored and sliced not too thin)
- 1/4 cup butter (56 1/2 grams)
- 1/2 cup sugar (100 grams)
- 1/4 teaspoon vanilla (1.05 grams)
- 1 egg
- 1 cup flour (120 grams)
- 1 1/2 teaspoons baking powder (7 1/2 grams)
- 1/4 teaspoon salt (1.4 grams)
- 3/8 cup milk (90 ml)
Pre-heat oven to 350° (180° celsius). Grease and flour an 8 inch (20 centimeters) cake pan ( used a 7 inch (18 centimeters) high sided cake pan).
In a medium Bowl whisk together flour, baking powder and salt, set aside.
FOR THE BASE
In a small bowl mix together softened butter and brown sugar, spread on the bottom of the prepared cake pan.
Spread sliced apples on top.
FOR THE CAKE
In a medium bowl beat together butter, sugar and vanilla. Add egg and beat until light and fluffy. Add flour mixture alternately with milk. Beat until combined. Pour over apple slices. Bake for approximately 40 minutes or until toothpick come out clean. Let cool until warm. Serve with a scoop of ice cream if desired. Enjoy!
