These grilled pork chops get their flavor from a fresh basil garlic rub with a splash of lemon juice. They grill up juicy, herby, and perfect for an easy summer dinner.

Fresh basil might not be the first herb people reach for with pork chops, but in an Italian kitchen it is a natural match, especially alongside garlic, olive oil, and lemon. The basil gives the pork a bright, fresh flavor, while the garlic keeps it savory and simple.

This is the kind of grilling recipe I love for warm weather because it does not need a long marinade or much prep. Just blend the basil garlic rub, spread it over thick pork chops, and grill until they are juicy, tender, and mouthwatering. It fits right in with simple summer favorites like grilled rosemary marinated steaks and Italian marinated grilled chicken.

Why You’ll Love This Recipe

The quick basil garlic rub is what makes these grilled pork chops so flavorful without a long marinade. It blends into a thick herb mixture that coats the pork beautifully, giving every bite fresh basil, savory garlic, and a bright hint of lemon before it ever hits the grill.

Basil Garlic Rub Ingredients

  • Pork chops: Thick boneless pork chops work best because they can get a nice grilled exterior while staying juicy inside.
  • Fresh basil: Use fresh basil, not dried, for the brightest flavor and best texture in the rub.
  • Garlic: Adds the savory flavor that balances the fresh basil and lemon.
  • Lemon juice: Brightens the rub and the bright citrus keeps the pork from tasting heavy.
  • Olive oil: Helps the basil garlic mixture blend smoothly and coat the pork chops.
  • Salt and pepper: The basil and garlic do most of the work in this marinade, but a little salt and pepper help balance the flavors.

How to Make Grilled Pork Chops

To start, make the basil garlic rub. In a food processor or blender, combine the fresh basil, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth. It should look more like a thick herb rub than a thin marinade, which helps it cling to the pork chops.

Spread the basil garlic rub over both sides of the pork chops, making sure they are evenly coated. Let them rest at room temperature before grilling.

Place the pork chops on the grill and cook, turning once, until they are nicely browned on the outside. Thick pork chops stay juicier, but they still cook quickly, so I like to start checking them near the end instead of guessing.

Let the pork chops rest for a few minutes, then serve while they are warm and juicy. The basil garlic rub gives them the best flavor when they are fresh off the grill.

recipe tips

  • Use thick pork chops. Thin pork chops can dry out quickly on the grill. A thicker cut gives you more time to get a nice exterior while keeping the inside juicy.
  • Fresh basil is key. Dried basil will not give the rub the same fresh flavor or texture. Fresh basil is what makes this basil garlic rub taste bright and summery.
  • Do not skip the short marinating time. The 20 to 30 minutes gives the basil garlic rub time to flavor the pork, and it also lets the pork chops lose some of their chill before grilling so they cook more evenly.
  • Gas, charcoal, or grill pan works. Use whichever grill you have, but watch the internal temperature since cooking time can vary by heat level and pork chop thickness.
  • Watch the temperature, not just the time. Pork chops can go from juicy to dry quickly, especially on the grill. Use a digital meat thermometer and cook until the internal temperature reaches 145°F.
  • Let them rest before serving. Give the pork chops a few minutes to rest after grilling so the juices settle back into the meat instead of running out when sliced.

Make Ahead

You can coat the pork chops with the basil garlic rub a few hours ahead of time, then cover and refrigerate until ready to grill. I would not marinate them overnight because the lemon juice and fresh basil are best with a shorter marinating time.
