Ok everyone I am back with my obsession with Greek yogurt! The other day my daughters and I were talking and they asked me what I preferred baking or cooking.
Hmmmm that’s a tough one I really enjoy them both. I actually find cooking easier because I never used to measure anything. Just a little of this and a little more or less of that. Until I started a food blog of course and then I had to start measuring everything.
So I guess if I had to pick one, today I would say baking (tomorrow who knows)? I think baking takes a little more patience and precision.
The reason I say today is because I have been trying to perfect this Ultimate Chocolate Chip Greek Yogurt Loaf recipe. I have made this loaf 4 times in the last week and perfection happened yesterday afternoon!
The first two times weren’t too bad. The first loaf I forgot to add the sugar! No problem the Italian ate it anyway, just dunk it in the cafe latte in the morning!
The second time I actually got some compliments from my Italian friends, but it wasn’t what I considered perfect. A little on the dry side, unfortunately Italian cakes tend to be dryer.
I guess that is why they are perfect for tiramisu and all kinds of Italian cream treats. They soak up all the liquids and they hold together so well.
I have to admit the third was an absolute disaster. Weird taste, I even forgot the salt, not enough sugar, butter instead of oil.
So I went back to the drawing board and back to the grocery store for more yogurt. And now we have The Ultimate Chocolate Chip Greek Yogurt Loaf. And this time I added nuts.
The Ultimate Chocolate Chip Greek Yogurt Loaf
The Ultimate Chocolate Chip Greek Yogurt Loaf came out soft and moist and what an amazing taste. Try it and let me know. Happy Sunday and enjoy!
- 1 cup all purpose flour 120 grams
- 1 cup cake flour 120 grams
- 1/2 cup vegetable oil 125 grams
- 1 cup sugar 200 grams
- 3/4 cup greek yogurt 187 grams
- 2 eggs and 1 egg yolk
- 1 tablespoon baking powder 12 grams
- 1/2 teaspoon salt 2.3 grams
- 1/2 cup semi sweet mini chocolate chips 90 grams, or unsweetened
- 1/4 cup ground walnuts 35 grans, if desired
Pre-heat oven to 340° (170° celsius) lightly grease and flour a 8 1/2 inch (22 centimeter cake or loaf pan)
In a large bowl whisk together flours, baking powder, salt, chocolate chips and nuts.
In a large bowl with a whisk gently combine oil, sugar, yogurt, eggs and egg yolk.
Fold in the flour mixture to the wet mixture with a spatula just until all the flour has been combined (don't over mix).
Add to prepared loaf/cake pan and bake for approximately 30-35 minutes, check for doneness with a toothpick, let cool 5 minutes and remove to a wire rack, dust with powdered sugar when cool if desired. Enjoy!
