Well it seems that now is the time for comfort foods, fall is turning into winter and we all need some comforting. The part of Italy where I am living (just south of Rome, Castelli Romani) the cooler weather has finally arrived. Up until the last couple of days we have been basking in the sun, with temperatures around the 20 degree mark, well that seems to have ended. The rain has started and out come the umbrellas and warmer jackets and boots. I can’t say that I am sorry as I really love the fall and the cooler temperatures and with that the comfort food. So for lunch today I decided to make one of my favourites, beef and peas in a tomato sauce, so delicious.
1-1.5 lbs. stewing beef (cut into 1/2-1 inch cubes)
1/2 bottle of tomato conserva *
1/2 teaspoon salt (or to taste)
1 teaspoon basil
1 teaspoon oregano
2 cloves of garlic sliced
3 tablespoon olive oil
1 1/2-2 cups water
2 cups peas
1 carrot chopped
In a medium frying pan with 1 tblsp of olive oil, brown flour dredged stewing beef. In a large pot add 2 tblsp olive oil, browned meat, add conserva ,water, basil, oregano, salt, garlic, stir, cook on low to medium for approximately 25 minutes then add peas and carrots, stir together, continue to cook for approximately 20 minutes or until peas and potatoes are cooked and sauce has thickened. Depending on how you like the sauce thicker or thinner you could even add more water, making it more like a soup. Enjoy serve immediately with crusty bread and a nice glass of wine.
* Conserva is called tomato puree in english, not to be confused with tomato paste. Tomato paste is much thicker and a stronger taste, please don’t substitute one for the other.
