Easy Strawberry Cookies
Easy Strawberry Cookies made with Fresh Strawberries and baked in 15 minutes. One bowl, no beaters necessary, soft, delicious cookies. The perfect summertime cookie recipe. Sprinkle a little powdered sugar or drizzle with melted chocolate and make them extra special.

I am now starting to get into strawberry mode. And since the season has just started here in Italy, I knew I had to make a batch of Strawberry Cookies again.
And to tell the truth I have been on a roll these days with “recipes the Italian won’t share” including Strawberry Cream Cheese Strudel , Chocolate Panna Cotta with a tasty Strawberry Topping and this popular Strawberry Mousse, of course these cookies are still on the list.
I really hope you are not sick of strawberries yet, because I still have a couple of recipe waiting in the wings! But these cookies I just had to post. 1. They are really good and make a great snack. 2. All you need is one bowl, a whisk and a spatula.
recipe Ingredients
- Sugar
- Vegetable Oil
- All Purpose Flour
- Lemon Juice
- Egg
- Baking Powder
- Vanilla
- and of course Fresh Strawberries
How to Make Strawberry Cookies

Gently fold in the chopped strawberries just until combined, do not over mix. Either form into balls or drop by spoonfuls on the prepared baking sheet. Sprinkle with a little sugar and bake until lightly golden. Cool and serve!

By the time strawberries are finished here in Italy I will be making my way to Canada to be re introduced to them for the start of the summer. So I might just have to think of a few more recipes.

Easy Strawberry Cookies
Ingredients
- 1 large egg
- 2 tablespoons lemon juice
- ½ cup oil (vegetable, coconut, light olive oil or melted butter)
- ½ teaspoon vanilla
- ½ cup + 2 tablespoons granulated sugar
- 1¾ cups all purpose flour
- 1½ teaspoons baking powder
- 1 cup chopped strawberries
Instructions
- Pre-heat oven to 350F (180C) line 1 or 2 cookie sheets with parchment paper.
- In a large bowl whisk together the egg, juice, oil, vanilla and sugar, until well combined.
- Add flour and baking powder and mix until combined, gently mix in the chopped strawberries just until combined. Form into balls (approximately the size of a golf ball. Place on prepared cookie sheets, sprinkle with a little granulated sugar and bake for approximately 15 minutes. Let cool completely and enjoy! Dust with powdered sugar before serving if desired.

How to store the strawberry cookies
Store the completely cooled cookies in an airtight container or bag, they will keep for up to 3 days at room temperature or up to a week in the fridge.How to freeze the cookies
Freeze the completely cooled cookies on a cookie sheet for about 1-2 hours until firm then place in a freezer safe container or bag. They will keep for up to 3 months in the freezer. Thaw the cookies at room temperature.Nutrition

Hi, Rosemary. Strawberry season fortunately, coincides with the end of my cardio. rehab sessions. I wanted to bring something extra special to the nurses and staff, so I picked your strawberry cookies as my gift.
I would suggest only two changes to your recipe. First, I would say in the ingredients that butter etc. are alternatives to oil. I would have used butter if I had seen that in time, but I had already added the oil. Second, to an inexperienced cookie, baker like me an estimate of the length of baking time would have been helpful.
Otherwise, it’s all great, and I thank you for providing such a perfect gift for my caretakers.

Hi Liz, it could be your flour doesn’t have enough protein, or the dough wasn’t thick enough. Chill the cookies before baking that will help also. Take care.
Hi I made the strawberry cookies. They taste yummy but I wasn’t able to roll them into a ball because it was too sticky.

Hi Rocky, probably the flour, some flour absorbs differently than others. You just make them as drop cookies and that’s fine too. Take care!
I followed the recipe, using butter but My strawberries were a little out of season so I added a half teaspoon of strawberry extract. Then drizzled some honey on the finished cookies instead of the powdered sugar. Will be making these again and we’ll try with some other fruits I have laying around!

What is the use of lemon juice?
Hi Zalak, lemon juice is used to help balance the sweetness and it also helps to bring out the flavour of the fruit, in this case strawberries. I hope that helps. Take care!
A softer/cakey cookie, but so delicious with some chocolate chips, balances the sour of the strawberry well. My mother in law did think they should be a bit sweeter

I followed this recipe to the letter and the batter come out wet and sticky so I spooned the mix on a tray and they come out rather cakelike still tasty but any thought on how to get a firmer batter?

Hi Marie, I have never sent them by mail, but depending on how many days it takes, they may spoil.
These cookies are really good. They’re just lightly sweet and have a really light texture; similar to a scone but lighter and better. These would be great on a breakfast buffet.
After reviewing other comments, I added lemon zest from the lemon I juiced and added 1/4 teaspoon of kosher salt. I’ll make these again for sure. I’ve already made two batches in two days. (My standard “vegetable oil” is avocado and it works fine in these cookies.)
