Here we are at that time of the month again, and this Month we are sharing Salad Recipes. Because as we all know summer is coming and that means lighter eating (or so we try) and less cooking.
Probably one of the only reasons that I do look forward to the summer. Unless of course I go visit my daughter and the rest of my family in Canada! Because summers in Italy are long and soooo hot.
Last month was dedicated to Chocolate and I shared another recipe perfect for the hot weather, No Churn Nutella Swirl Chocolate Chip Ice Cream.
I actually don’t have very many salads on the blog, but I love them, we have fresh salad almost every day with our meals.
And in the summer, a Salad can be a meal, especially when you make a tasty Pasta Salad or Rice Salad. Or one of my favourites, Borlotti Bean Salad and then there is my Mom’s potato salad that I can still taste.

So when the idea of salads came up I decided to make one of my favourite grilled meats, chicken, and a simple tossed salad and of course a creamy Italian dressing would be a tasty accompaniment.
This homemade Creamy Italian Dressing with Grilled Chicken Salad made the perfect lunch.
Today is a big holiday in Italy, Primo Maggio (May first) the equivalent to Labour Day in North America. Which means I will be eating a little bit more than a salad! 😉 Buon Appetito!

Homemade Creamy Italian Dressing with Grilled Chicken Salad
Ingredients
GRILLED CHICKEN
- 4 pieces boneless chicken
- 2 tablespoons olive oil (27.4 grams)
- 1 teaspoon oregano
- 2 sprigs chopped rosemary
- salt and pepper to taste
CREAMY ITALIAN DRESSING
- 1/2 cup mayonnaise (110 grams)
- 1/4 cup milk (57.5 grams)
- 2 tablespoons balsamic vinegar (29.8 grams)
- 3/4 teaspoon Italian seasoning
- 1/4 teaspoon sugar
- 1 clove garlic crushed
- salt and pepper to taste
GREEN SALAD
- mixed greens of choice
- 1 avocado sliced
- 10 cherry tomatoes
- other ingredients desired
Instructions
GRILLED CHICKEN
- On a hot grill (BBQ,Grill or Pan Grill) place chicken pieces, brush with olive oil and sprinkle with oregano, chopped rosemary, salt and pepper turn and repeat, cook until no longer pink.
CREAMY ITALIAN DRESSING
- Mix all ingredients in a glass jar and shake well to combine or mix in a blender.
MIXED GREEN SALAD
- In a large bowl combine ingredients.
- On a plate add one slice grilled chicken, salad greens and top with creamy Italian dressing. Enjoy!
