The difference between lemon juice and zest

Some insist that the zest has more lemon flavour than the juice. The zest is the oil of the lemon and is therefore filled with the pure lemon flavour.

The juice holds the acidic tart taste of the lemon. Just be sure to grate only the yellow part of the lemon and no white part. The white part will add only bitterness. And you don’t want that!

How to choose the perfect lemon

Be sure to choose lemons that are firm, unblemished and have no green on the skin, which means they are not quite ripe. They should feel heavy, stay away from really pale lemons which means they are older and contain less juice.

Fresh or bottled juice?

Always reach for the fresh lemon, the flavor is so much better than bottled juice, which more than likely will also contain preservatives.

How to store lemons

Lemons should be stored in the refrigerator. To make them last longer keep them in an airtight container or zip top bag. They should keep for up to 4-6 weeks in the fridge.

They can also be frozen,  place the lemon in a freezer safe bag (remove as much air as possible) or container. Thaw the lemons in the microwave for a few seconds, or place them in cold water for about 10 to 15 minutes.
